Beefy Black Bean Salsa Bake
Easy to make and tasty to eat, a hearty warm supper to carry us through the last of winter and the tease of spring.
1 lb ground beef 1 Tablespoon Trade Winds Spice Company Chili Blend 3 Tablespoons sour cream 12oz jar Trade Winds Spice Company Black Bean Salsa 8 oz (about 2 cups) shredded cheddar cheese 2 cups tortilla chips crushed into large pieces
Preheat oven to 350°F. Brown the ground beef and drain off the fat. Stir in the chili blend, sour cream and salsa and set aside. Place ½ of the beef mixture in a 2 quart casserole dish, sprinkle on ½ of the cheese and 1 cup chips. Repeat the layers. Bake at 350°F for 30 minutes.
Swedish Roll Ups

4 eggs 2 Tablespoons butter, melted 2 cups milk 1 ½ cups flour ½ teaspoon Trade Winds Spice Company Sea Salt 1 ½ teaspoons Trade Winds Spice Company Ground Korintje Cinnamon* 2 Tablespoons sugar*
Trade Winds Spice Company Sugar & Spice Maple syrup Fresh fruit Whipping cream
In a blender combine eggs, butter, milk, flour, salt, cinnamon and sugar; mix well. Spray round skillet or sauté pan with non-stick cooking spray; preheat to medium.
For each roll up pour 3 tablespoons batter in pan. Move pan in circular motion to create crepe like pancakes. Cook first side for about 30 seconds, watching carefully. Turn and cook second side about 15 seconds. Remove and roll up pancake. Repeat with remaining batter.
Place roll ups on plates. Garnish with a sprinkle of Sugar & Spice and serve with warm maple syrup and fruit and whipping cream if desired.

Variation: instead of the cinnamon and sugar, substitute 2 ½ Tablespoons Trade Winds Spice Company Sugar & Spice or Trade Winds Spice Company Cinnamon Orange Sugar
Gone in 60 Seconds
Last night was Ladies Night in Downtown Stillwater and we served this tasty little treat. Think pepper jelly over cream cheese exponential. Yummy and easy. Pick your favorite flavor of pepper jelly, set out some crackers and stand back.
½ cup Aloha from Oregon Pepper Jelly (your choice of flavor)
Mix together: 1 8oz package cream cheese softened 1 cup cheddar cheese shredded ½ cup finely chopped pecans ½ cup chopped green onions
Form into a flat ball and chill for 2 hours or overnight. When ready to serve, top with your favorite flavor of Aloha from Oregon Pepper Jelly.
